1⁄2 cup 1% low-fat buttermilk
1 tablespoon Dijon-style mustard
1⁄2 teaspoon garlic powder
1⁄2 teaspoon hot sauce
4 chicken thighs, skin removed
6 chicken legs, skin removed

3⁄4 cup whole wheat flour
Direction
1. In a shallow glass baking dish, whisk buttermilk, mustard, garlic and hot sauce. Add chicken, turning to coat. Cover and marinate in the refrigerator for 2-6 hours.
2. When ready to cook chicken, preheat oven to 425° F. Line baking sheet with foil, set a wire rack on the baking sheet, and coat it with cooking spray.
3. Place remaining ingredients (whole wheat flour through pepper) into a large sealable plastic bag; shake to combine.
4. Lift one piece of chicken out of marinade and gently shake off any excess marinade. Place piece of chicken into the bag with seasoned flour; close bag and shake to coat chicken. Open bag and lift chicken out, gently shaking off excess flour. Place chicken onto prepared wire rack.
